  • 1 whole garlic bulb, peeled
  • Handful of cilantro (or parsley/epazote)
  • Splash of olive oil

Soup

  • 1 tablespoon olive oil
  • 1.5 lbs sausage, diced
  • 3 large carrots, diced
  • 2 lbs Seminole pumpkin, any kind of orange flesh pumpkin, or butternut squash, peeled and cubed
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 3 tablespoons chicken bouillon powder
  • 1 tablespoon vinegar (apple cider or white)
  • 1–1½ cups lentils, rinsed
  • 1 bunch kale, stems removed and chopped

How to Make Squash, Sausage, Kale, and Lentil Soup

This recipe comes together in a few simple steps and all cooks in one pot.

1. Make the Sofrito

Blend the tomatoes, peppers, onion, garlic, herbs, and olive oil until smooth.

Set aside about 3 cups for the soup. Extra can be frozen for later use.

2. Prep the Ingredients

  • Dice the carrots into small pieces
  • Remove kale stems and chop leaves
  • Rinse lentils thoroughly
  • Peel and cube the squash into even pieces
