My Favorite Beet Recipe! Pink Beet Pasta with Lemon Alfredo Sauce

Hot Pink Beet & Lemon Alfredo Pasta with Crispy Pancetta & Pistachio Crumb

This beet pasta recipe is creamy, savory, bright, and absolutely stunning on the plate. Fresh roasted beets create a naturally vibrant pink sauce, while lemon zest and juice keep the Alfredo-style base from feeling too heavy.

The finishing touch is a crispy pancetta, pistachio, and panko topping that adds the perfect salty crunch. It makes the dish feel special enough for guests, but it’s still simple enough for a weeknight dinner.

The most important tip: use fresh roasted beets, not pre-cooked canned or jarred beets. Fresh beets give this pasta its intense hot pink color and deeper flavor.

Ingredients

For the Beet Lemon Alfredo Sauce

  • 2 large fresh beets, peeled and roasted
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 garlic cloves, peeled
  • 4 tablespoons finely grated parmesan cheese
  • 1 lemon, zested and juiced
  • 150 grams ricotta cheese
  • ⅓ cup heavy cream
  • ½ teaspoon salt

For the Crispy Pancetta Pistachio Topping

  • 4 ounces pancetta, diced
  • ¼ cup roasted unsalted pistachios, finely chopped
  • ½ cup panko breadcrumbs
  • ⅛ cup fresh parsley, chopped
  • ⅛ cup fresh basil, chopped

For Serving

  • 1lb of pasta of choice, such as fettuccine
  • Reserved pasta water
  • Extra fresh basil or parsley for garnish

How to Make Beet Pasta with Lemon Alfredo Sauce

1. Start by roasting the beets and garlic. Preheat your oven to 375°F. Trim the tops and bottoms from the beets, peel them, coat with olive oil, and season with salt and pepper. Wrap the beets tightly in aluminum foil and place them on a baking sheet.

2. Add the peeled garlic cloves to a separate piece of foil, drizzle with olive oil, season lightly with salt and pepper, and wrap them closed. Roast the garlic until soft, about 45 minutes to 1 hour. The beets will take longer, usually 1 to 2 hours, depending on their size. They are ready when a fork easily pierces through the center. Let both the beets and garlic cool completely before blending.

3. Once cooled, add the roasted beets and garlic to a blender with lemon juice, lemon zest, parmesan, ricotta, heavy cream, and salt. Blend until completely smooth. The sauce should be silky, creamy, and bright pink.

4. Next, make the crispy topping. Cook the diced pancetta in a skillet over medium heat until crisp. Add the chopped pistachios and stir well so they toast lightly without burning. Stir in the panko breadcrumbs and cook just until everything is golden and crunchy. Remove from heat and set aside.

5. Cook your pasta according to the package directions. Before draining, reserve some of the pasta water.

6. Pour the beet lemon Alfredo sauce into a large pan over medium heat. Add the cooked pasta and toss until evenly coated. If the sauce is too thick, add a splash of reserved pasta water until it reaches a creamy consistency.

7. Plate the pasta and top with the crispy pancetta pistachio crumb. Finish with fresh chopped basil or parsley.

Tips for the Best Pink Beet Pasta

Fresh roasted beets are the key to the brightest color. Pre-cooked beets may still taste good, but they usually create a duller sauce.

The lemon is also important because it balances the natural sweetness of the beets and the richness of the ricotta, parmesan, and cream. If the sauce tastes too earthy or heavy, add a little more lemon juice.

The crispy topping is worth making. The pasta itself is smooth and creamy, so the pancetta, pistachios, and panko add the texture that makes the dish feel complete.

For extra protein, serve this pasta with sliced grilled chicken breast.
