Quick Refridgerator Dill Pickles - No Canning Required

Ingredients
Bunch of cucumbers best for pickling
bunch of fresh dill

Pickling Brine Ingredients
4 cups of water
2 cups white vinegar
2 TBS salt
1 TSP sugar
10 peppercorns
10 coriander seeds
1 TSP minced garlic (optional)

Glass mason jars - I am using 32oz wide mouth mason jars that I got from Amazon HERE

Directions
1. Add all of the brine ingredients into a pot and boil just until the sugar and sale are dissolved. Remove from the heat and let it cool down to room temperature. 

2. Fill the bottom of your mason jars with fresh dill.

3. Quarter the cucumbers lengthwise. Fill the jar with the cucumbers. Pour enough brine to cover the pickles. 

4. Place the mason jars in the refrigerator for 3 days before eating for the best flavor and texture. It will last for up to 2 months in the fridge. Can can the jars to make them last longer.
